Patricio Pérez, chef at the gastrobar El Jinete Sin Cabeza, and Yaiza Alonso, cook at Restaurante Guaydil, contribute to the knowledge and revaluation of zero-kilometre products.
All three advocate food sovereignty and the circular economy, seeing the protection of local produce as a great opportunity to preserve the cultural heritage of the people in the countryside of La Laguna.
